you can build a 427w from a dart block 4.125 bore piston, 6.250 rod lenght and 4.00 stroke crank. I’m putting this on together right now for my 62 falcon for strip only a little costly but hp ain’t cheap lol. I am also looking to build the 427 stroker and have all the same problems you are.

The rod ratio IS an issue for longevity. There is quite a bit of side load on the piston wall. The oil consumption issues really have been resolved on strokers now days. 393 and 408 strokers are popular for the simple fact they will last awhile, and the rod angle is not too severe.
