Any higher than 240 I would start to worry. I just got an 88 C-4 Corvette and took it out on the freeway and then got into stop and go traffic. Water temp was running 233-235 range and oil temp was at 240. Is this still safe to run an engine at those temps? This is my first Vette and I am used to the old car where anything over 210 was alarming.
