Type of car and engine/transmission. Type of radiator (aluminum or brass,) temp thermostat, type of water pump, where you live, when does it get hot (stop and go traffic, freeway speed, at idle, etc. For a ballpark answer though, a fairly stock 302 probably should stay in the 180-210 degree range.

That is definitively too hot, and normal operating temperature should be around what thermostat you have in there. IE. 192 or 195. On a normal day mine stays at 192 with a 192 degree thermostat in it. hmmm…
