A freezing evaporator can cause exactly that. usually a symptom of the system being slightly low. I would suggest having the system discharged and refilled by weight. When using guages and a can tap to fill the system sometimes you can be a bit low and pressures will be in an acceptable range.

Why does my evaporator freeze up in the truck?
Use the vin from the truck. There are a few different ones. Low freon will not cause it to freeze up. That happens on Home/residential units. ON these the switch will make it shut on and off like mad and cycle to much. Evap could be clogged but most likely the cycle switch.
